What is the most efficient way to convert several hundred pages of printed text to an ebook?

I have a book only available in book form or as a standard manuscript that I would like to republish. I need to convert the text into some kind of computer saved document so I can publish an ebook or make the manuscript re printable. I’m looking for the most efficient way to do that. I do have a scanner.

I have written a series of articles which I want to compile into an e Book. I’ve saved the articles as PDF but I have no idea what to do next. How do you actually put them in an e Book? The title of each article will be the heading for each chapter but I can’t figure out how to get it all together.
